Spinach or Palak Rice recipe is a quick and healthy rice recipe. If your kids do not like the regular spinach vegetable, try this simple and quick recipe.
Ingredients for the recipe:
4 cup soaked and cooked rice
2 tbsp Oil
1 tsp Cumin seeds or Jeera
1/2 inch ginger or 1/4 tsp ginger paste
2 tsp green chilli paste
1 cup cooked sweet corn
Bunch of spinach shredded or 1 medium bowl of spinach leaves
Salt to taste
Recipe Preparation time:
Cook rice with pinch of salt and keep aside. Also cook sweet corn with pinch of salt.
In another pan, add oil and heat it. Add cumin seeds, crushed ginger you can also use ready made or homemade ginger paste, green chilli paste and saute for a minute or two.
Add shredded spinach and steamed sweet corn and saute it till spinach starts changing texture.
Add cooked rice to the above cooked vegetables and mix it gently.
Add salt to taste and cover it with the lid for 5 minutes.
Turn off the gas flame and uncover.
The rice is ready to serve.
The above preparation is for 4 servings.
Serve steaming hot rice !!!
Tip: While preparing the palak / spinach rice recipe, keep a tab on salt as we are adding it 2-3 times separately and spinach also has its own salty taste. Do not overcook the rice recipe so as to keep the nutrition value of spinach intact.
